Coffee Cupcakes or I am your president...you spoiled snowflake
Ingredients
2 TBSP unsweetened cocoa powder
1/2 cup butter
1 1/2 brown sugar
2 large eggs
1 tsp vanilla
2 1/4 cup cake flour
1/2 tsp salt
1 1/2 tsp baking soda
1/2 cup sour cream
3/4 cup coffee
2 TBSP dark roast coffee ground
Chocolate Ganache
1 cup heavy cream
9 oz chocolate
3/4 cup butter
1 1/2 icing sugar
1 tsp coffee ground
1TBSP rum
Instructions
Preheat oven to 325F. Line standard muffin tins with paper liners.
Cream 1/2 cup butter until smooth and light.
Add 1 and 1/2 cup brown sugar and 2 eggs. Beat until fluffy.
Add 1tsp vanilla, 1 1/2 tsp baking soda and 1/2 tsp salt. Mix well.
In a separate bowl mix 2 1/4 cup cake flour(sifted) and 2Tbsp cocoa.
Add flour mixture in 3 batches, alternating with 2 additions of sour cream.
Add 3/4 cup coffee slowly.
Add 2Tbsp coffee ground and mix it together.
Divide batter evenly among linen cups, filling each 3/4 full.
Bake for about 23 min.
Chop the chocolate.
In a sauce pan, warm the cream until boils.Pour the cream over the chocolate. Whisk until chocolate is melted and smooth.
Add rum and coffee ground and mix.
Refrigerate to cool and harder.
In a mixer beat the butter until softened. Add the icing sugar and mix.
When ganache has cooled gradually bit into butter and sugar mixture.
Refrigerate to harden. Spread the ganache on your cooled cupcakes.
Garnish each cupcake with coffee bean, white chocolate or raspberries...
