Great Grandma's Famous Jimmy Cake
Ingredients
- 1/2 cup coconut oil
- 1/2 cup butter
- 2 cups icing sugar
- 2 tsp baking powder
- 4 egg yolks
- 4 egg white, beaten
- 1 cup cold coffee
- 1 cup chocolate jimmies
- 2 cups flour
- 1/2 tsp salt
- 1tsp vanilla
- Glaze:
- 2 cups chocolate
- 1 Tbsp oil
Instructions
- Cream oil and butter.
- Add icing sugar and mix.
- Add 4 eggs yolks, coffee and vanilla.
- Mix in flour,salt, baking powder. Add jimmies.
- Fold in beaten egg whites.
- Baking in 9 inch tube pan at 325 F for about 1 hour.
- Melt the chocolate and oil and top the cake.
