Breakfast Fab Omelet

BREAKFAST FAB OMELET from 5starcookies.com is no fuss, fabulous and prepared in 15 minutes or less.

Ingredients

  • 2 eggs
  • 1/2 TBSP milk
  • 1/3 cup spinach, chopped
  • 1/3 cup cheese (grated or cut in cubes)
  • 3 cloves garlic, minced (or as much as you want to)
  • 9 cherry tomatoes
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • basil (as much as you want to)
  • Optional: Mashed Green tomatoes

Instructions

  1. Whisk 2 eggs and milk in a medium bowl. Add chopped spinach, salt, pepper and stir all ingredients together. Set aside. Heat 1 1/2 TBSP oil in the frying pan until very hot. (I used 9 inch frying pan) Pour the eggs mixture so they cover the bottom of the pan.
  2. Cook the eggs on medium heat until the edges begin to cook and set. Using a spatula, push the cooked egg into the center of the pan. The uncooked egg will run to the side. Do this until all the egg mixture is cooked. Sprinkle omelet with grated cheese.
  3. Add cherry tomatoes, mashed green tomatoes, minced garlic and basil. Fold omelet in half, allowing cheese to melt. Slide cooked breakfast fab omelet onto garlic naan bread. Serve and enjoy.
