Ingredients

  • 3 TBSP oil
  • 2 large onions
  • 3 large carrots
  • 1 1/2 cups uncooked and washed rice
  • 2 peppers (red or green)
  • 4 1/2 cups water
  • 1 lbs chicken breast
  • 1 TBSP salt
  • 1 tsp black peppers
  • 1 tsp oregano
  • 3 lbs tomatoes

Instructions

  1. Slice tomatoes. Set aside.
  2. Mixed chopped onions, peppers, carrots and rice in a large bowl.
  3. Add salt and pepper to taste. Set aside.
  4. Cube chicken breast into a medium pieces. (or any size you like)
  5. The next step is to boil 4 1/2 cups of water with salt and pepper.
  6. Now, you have everything ready:
  7. sliced tomato
  8. mixed vegetables/rice
  9. cubed chicken
  10. boiled water
  11. Take a casserole dish and layer the ingredients in this order:
  12. -pour 3 TBSP oil into bottom
  13. -place half of sliced tomatoes
  14. half of the veggies/rice mixture
  15. chicken
  16. Remaining veggies
  17. sliced tomatoes
  18. Pour the boiling water over the casserole.
  19. Cover and bake at 450 for about 90 minutes . (hour and half)
  20. Be sure that rice is thoroughly cooked.
  21.                       
  22. Serve and enjoy.
  23. It can be re-heated.
