The cookies are soft, delicious and holiday beautiful.
Made with simple ingredients and connected with Nutella and raspberry jam.
Each cookie is topped with almond icing and decorated with colored sugar and sprinkles
Preheat oven to 350 F.
Line baking trays with parchment paper. Set aside.
Beat 1 cup butter and 3/4 cup icing sugar until smooth. (about 2 minutes)
Add egg yolks,whole egg and vanilla extract and mix for about 1 minute.
Add sifted flour and salt. Then stir until blended.
Shape into a disc and wrap in plastic wrap.
Chill for about 3 hours or overnight.
When you are ready to make cookies, live the dough on room temperature for about 15 minutes.
Roll it out to 1/4 inch thick.
Cut out the cookies using 2 inch cookie cutter.
For the Christmas I like to use the flower cookie cutter or Christmas tree cookie cutter.
Place the cookies on the baking tray with 1 inch space between them.
Bake your famous Christmas cookies at 350 F for 10 minutes. (if I used Christmas tree cookie cutter I bake for 9 minutes and 30 seconds)
Cool the cookies.
Assemble Christmas Empire Cookies
Time to bring cookies together. How?
With raspberry jam and Nutella.
Spread half of the cookies with 1/2 TBSP raspberry jam and and other half with 1/2 tsp Nutella.
Sandwich them. Repeat with the remaining cookies..
Make Sugar Icing
In a small bowl, combine icing sugar and almond extract. Add hot water and stir with metal spoon until smooth.
The consistency should be spreadable but not too runny.
Optional: You can make icing red, pink or green by adding food color.
Then spread about 1 tsp of icing on top of the cookie.
Decorate with colored sugar, sprinkles or candied cherries.
Let the cookies dry at room temperature for about 3 hours.
After that store them in an air tight container. (at room temperature)
They are best to eat after 1 or 2 days.
The Empire cookies are great for shipping.
