  • 3 TBSP warm water
  • 1 tsp almond extract
  • food color: red, green, pink
  • Decoration: red and green sugar, sprinkles, candied cherries

Instructions

    Preheat oven to 350 F.

Line baking trays with parchment paper. Set aside.

Beat 1 cup butter and 3/4 cup icing sugar until smooth. (about 2 minutes)

Add egg yolks, whole egg and vanilla extract and mix for about 1 minute.

Add sifted flour and salt. Then stir until blended.

Shape into a disc and wrap in plastic wrap.

Chill for about 3 hours or overnight.

When you are ready to make cookies, live the dough on room temperature for about 15 minutes.

Roll it out to 1/4 inch thick.

Cut out the cookies using 2 inch cookie cutter.

For the Christmas I like to use the flower cookie cutter or Christmas tree cookie cutter.

Place the cookies on the baking tray with 1 inch space between them.

Bake your famous Christmas cookies at 350 F for 10 minutes. (if I used Christmas tree cookie cutter I bake for 9 minutes and 30 seconds)

    Cool the cookies.

    Assemble Christmas Empire Cookies

Time to bring cookies together. How?

    With raspberry jam and Nutella.

Spread half of the cookies with 1/2 TBSP raspberry jam and and other half with 1/2 tsp Nutella.

Sandwich them. Repeat with the remaining cookies..

    Make Sugar Icing

In a small bowl, combine icing sugar and almond extract. Add hot water and stir with metal spoon until smooth.

The consistency should be spreadable but not too runny.

Optional: You can make icing red, pink or green by adding food color.

Then spread about 1 tsp of icing on top of the cookie.

Decorate with colored sugar, sprinkles or candied cherries.

Let the cookies dry at room temperature for about 3 hours.

After that store them in an air tight container. (at room temperature)

They are best to eat after 1 or 2 days.

The Empire cookies are great for shipping.

So if you want to share empire nutella cookies with your whole family you can.

They stay fresh for about 4 to 5 days.

    Enjoy and share.
