Empire Cookies - Raspberry jam filled sandwich cookies topped with an almond icing and candied cheery. Say "YES"! 5 star cookies is making this for YOU!
Ingredients
  • 1 cup butter
  • ¾ cup icing sugar
  • 3 egg yolks
  • ½ TBSP vanilla extract
  • 2 +1/2+ ⅛ cups flour (AP)
  • Raspberry jam
  • Icing
  • 1½ cups icing sugar
  • 3 TBSP warm water
  • ½ TBSP almond extract
Instructions
  1. Line 3 baking trays with parchment paper.
  2. Set aside.
  3. Beat 1 cup butter and ¾ cup icing sugar until smooth. (about 2 minutes)
  4. Add egg yolks and vanilla extract and mix for about 1 minute.
  5. Add sifted flour and stir until blended.
  6. Shape into a disc and wrap in plastic wrap.
  7. Chill for about 3 hours.
  8. After chilling....
  9. Time to play with your dough...
  10. Roll it out to ¼ inch thick.
  11. Cut out the cookies using any cookie cutter you like.
  12. Place the cookies on the baking tray with 1 inch space between them.
  13. Bake cookies at 350 F for 10 minutes.
  14. (it should be lightly browned around the edges)
  15. Cool the cookies.
  16. Spread half of the cookies with ½ TBSP raspberry jam and top with remaining cookies.
  17. Repeat with the remaining cookies.
  18. Icing
  19. Combine icing sugar, almond extract and enough hot water to make a thin icing.
  20. Frost tops of cookies and decorate with a small piece of candied cherry.
  21. Say thank you.
  22. Allow icing to dry. (about 1 hour)
  23. Keep them in airtight container. (3 days)
