Raspberry White Chocolate Lemon Flourless Torte

Flourless perfection - Combo of organic eggs, white chocolate, raspberries and lemon curd. Your dream cake
Ingredients
  • 6 large eggs (organic) separated
  • 1 bag of white chocolate chips (225 gr Hershey's)
  • ½ cup sugar
  • ¼ cup warm water

  • Filling
  • 3 cups heavy cream
  • ⅓ cup icing sugar
  • ¼ cup lemon curd
  • ¼ cup raspberry jam
  • ⅛ cup whole raspberries
Instructions
  1. Prepare 2 round pans by lining them with parchment paper.

  3. Using a double boiler method, combine white chocolate and ¼ cup warm water.
  4. Mix until white chocolate is melted and smooth. Set aside to cool slightly.
  5. Meanwhile, find two mixing bowls.
  6. (One will be for egg yolks, the other for egg whites.)
  7. Follow the recipe below.
  8. Add 6 egg yolks into the bowl number 1.
  9. Mix until egg yolks are pale and thick. (4 to 5 minutes)
  10. Then fold in the melted white chocolate. Set aside.
  11. In a bowl number two, mix 6 egg whites until foamy.
  12. Add ½ cup sugar and whip until soft meringue.
  13. Gently fold ⅓ whipped egg whites into yolk/white chocolate mixture.
  14. Fold until incorporated.
  15. Then quickly fold in the remaining whites and gently folded until no streaks remain.
  16. Pour butter into prepared 2 round pans. (6 or 7 inches)
  17. Bake at 350 F for about 30 to 35 minutes.
  18. Cool cakes in pans.

  20. Make Filling
  21. Mix heavy cream and icing sugar.
  22. Add lemon curd and raspberry jam.
  23. Mix all ingredient together.
  24. Then add whole raspberries and mix it.

  26. Assembly Line
  27. Layer 1 + Filling + Layer 2 +Filing
  28. Decorate with raspberries and white chocolate.
  29. Keep in the fridge for 8 hours or overnight.
