Important:

Please use ROOM TEMPERATURE EGGS AND MILK.

Line the bottom of a jelly roll pan (11×17) with aluminum foil and lightly spray with baking spray.

Set aside.

Wash one cup of raspberries.

Dry it.  Use 1/2 cup of raspberries and break into smaller pieces.

Preheat oven to 350 F.

Making WHITE RASPBERRY DREAM CAKE


Ingredients

5 egg yolks

4 egg whites

3 TBSP milk

2 TBSP olive oil

1 cup sugar

1/2 tsp vanilla extract

3/4 cup flour (AP)

2 TBSP cornstarch

1 tsp baking powder (no AL)

Filling for the best raspberry cake

8 oz cheese

1 3/4 cups icing sugar

1 pouch Knox gelatine

1 1/4 cups heavy cream

1 cup fresh raspberries

Instructions

Using the whisk attachment mix 5 eggs yolks, 3 TBSP milk, 2 TBSP olive oil, 2/3 cup of sugar and 1/2 tsp vanilla extract for about 5 minutes.

Sift together 3/4 cup flour. Add 1 tsp baking powder,, 2 TBSP cornstarch and mix into the yolk mixture until well blended.

In a large bowl, mix 4 egg whites for about 1 minutes and add 1/3 cup sugar.

Please add sugar slowly and mix for another 2 minutes or until 3 times in volume.

Use a spatula to fold the egg whites into yellow/eggs mixture until fully incorporated.

Pour into prepared baking sheet and bake for 15 minutes at 350 F.

Cool completely.

While cake is cooling let’s make the filling.

Mix 8 oz cheese and 1 3/4 cups icing sugar. (for about 2 minutes)

In another bowl mix heavy cream.

Add into cheese mixture and mix until incorporated. (for about 1 minute)

Add 1/2 cup raspberries (cut into small pieces) and mix all ingredients.

Next step is to add the prepared gelatine. (see instructions below)

Quickly mix all ingredients.

How to Prepare gelatine

In a small cup sprinkle 1 pouch Knox unflavoured gelatine over 1/4 cup (50 ml) cold water.

Let stand for 1 minute.

Add 1/4 cup (50 ml) boiling water and stir until granules are completely dissolved.

Now your cake is cool and your filling is done.

You are ready for assemble.

YOU ARE. Trust me.

White Raspberry Dream Cake Assembly

You will need loaf pan (11-5/8″ L x 5-1/8″ W x 2-3/4″ H)

Line your loaf pan with plastic wrap.

Now take your cool cake and cut into 2 pieces.

One is 11×10 size and the other is 11×7

Now take your bigger pieces (11×10) and place inside of loaf pan.

Pour your raspberry filing into it and close the top with your second cut part 11×7.

Cover everything with plastic wrap and leave in the freezer for at least 4 hours or overnight.

Next Day

Free cake from the loaf pan.

Decorate as you wish, share and enjoy.

Hello my dear readers,

It’s the September 24 of this amazing 2017…and it is my birthday.

Happy Birthday to me (I) ! And to you if it is your birthday!

Since today is the day of the celebration in my house let’s make something special.

Yes, ladies and gentlemen let’s make ….

Cinnamon Cheese Roulade

To make the Cinnamon Cheese Roulade you will need to make two things:

-roll cake

-cheese filling

Like always before we start we need to be sure that we have all ingredients that this cake is asking for!

Shopping List

-CAKE – eggs,sugar,flour,baking powder,cinnamon

-Filling – cheese,whip cream, sugar,vanilla extract

Now, let’s start our baking show!

BAKING SHOW STARTS RIGHT NOW!

3-2-1 READY?

Before you start preheat oven to 350 F. (please)

Line the bottom of an 18×13 baking sheet with parchment paper or Al foil.

Equipment: KitchenAid Mixer, whisk attachment

MAKING CAKE

Ingredients

5 eggs (organic is the best)

3/4 cup sugar

3/4 cup flour (AP – all purpose)

2 tsp cinnamon

1/2 tsp baking powder

Instructions:

Using the KitchenAid stand mixer fitted with whisk attachment beat 5 eggs on high speed for 1 minute.

After eggs get foamy add 3/4 cup sugar very slowly. (use tablespoon to add sugar, it has to be done gradually).

Beat for about 9 minutes on high speed or until tripled in volume.

In another bowl mix 3/4 cup flour, 2tsp cinnamon and 1/2 tsp baking powder.

Sift flour mixture into egg batter 1/3 at a time, folding to incorporate between each addition.

Be sure that the flour mixture is incorporate into eggs/sugar batter.

Then transfer mixture into lined baking sheet and bake for 15 minutes at 350 F.

(Use fork or toothpick to check if cake is done).

While cake is baking prepare 2 large linen or cotton towels.

Wet two towels with cold water and wring it out.

When cake is baked run a thin edged knife around edges of your cake to loosen from the pan.

Invert cake face down onto a wet towel, remove parchment paper, cover with second wet towel.

Let to cool for about 35 to 45 minutes.

Meanwhile, make the filling.

Filling:

6 oz cheese, room temperature

1 1/4 cup icing sugar

1 1/2 cup heavy cream

1 tsp vanilla extract

In a large bowl mix cheese and sugar.

Add 1 tsp vanilla.

In another bowl whip 1 1/2 cup whip cream.

Fold the whipped cream into cheese/sugar mixture.

Keep it in the fridge until ready for use.

Now, let’s go back to our cake.

Remove the top towel and try to roll the cake.

(If not, wet the top towel again with cold water and cool it for another 10 minutes.)

If you are successful the cake is ready for your cheese filling.

Place the cheese filling by large spoonfuls all over it.

Spread the cheese filling evenly.

Using the bottom towel roll the cake into a log and place into a long serving platter.

Refrigerate the cake until set.

Today is Monday, May 22, the year is 2017.

Don’t you think it is scary how times flies? Very soon will be the Christmas and a New Year.

But, let’s not think about it.

Let’s not think how quickly life goes by. For now I want us to appreciate the moments.

And the moment is my favorite cake – The Raspberry White Chocolate Roulade.

It is one of my favorite, especially for the spring season.

This rolled sponge cake is filled with a rich raspberry white chocolate filling. It looks and tastes superb.

Please check your shipping list before you start making this cake.

Shopping List

-eggs

-sugar

-AP flour

-baking Powder

-white chocolate

-heavy cream

-raspberries

Now, if you have all ingredients we can start baking process.

Be sure that you make the white raspberry filling first and then make the sponge roll.

IMPORTANT!!! – Make the raspberry filling first. (STEP 2)

Action Mode

1.Making the Batter

Ingredients

5 large eggs, room temperature

¾ cup granulated sugar

¾ cup all-purpose flour

½ tsp baking powder

Preheat oven to 350˚F.

Line the bottom of an 16×11 baking sheet with parchment paper.

Mix 5 eggs for 1 minute using a stand mixer. (fitted with whisk attachment).

Gradually add 3/4 cup of sugar. Slowly. Beat eggs and sugar for about 6 minutes on high.

It will be thick and fluffy.

In another bowl whisk 3/4 cup all purpose flour and 1/2 tsp baking powder.

Next step is to sift into eggs and sugar 1/3 at a time.

Fold using spatula after each addition.(fold very carefully, you don’t want to upset egg and sugar mixture.)

The whole idea is to create a light and airy batter.

One more time. Important!

Be sure that flour is mixed well into egg/sugar batter.

If you have all your ingredients mixed and happy together transfer batter to lined baking sheet and bake for 12 to 15 minutes.

You need to test to be sure it is baked.

When cake is baked, run a knife around edges of your cake to loosen from the pan.

Invert cake onto a clean kitchen towel, remove parchment paper and roll cake into the towel.

Let cool for about 60 minutes.

Unroll the cake. Spread the white chocolate filling using the metal spatula or knife.

Carefully roll up the filled cake as tightly as possible.

Optional: Cut each end of cake on the diagonal. Transfer the cake to a serving plate for decoration.

You can decorate with whip cream or chocolate.

STEP 2

Now let’s make the White Chocolate Raspberry Cream

Ingredients:

3/4 cup heavy cream

2  and 1/2 cup of white chocolate chips

6 oz or 170 gr fresh Raspberries

Puree raspberries using food processor.

Pour the raspberry mixture through a fine sieve to get rid of seeds. Set aside.

Bring the heavy cream to a boil.

Pour over 2 and 1/2 cup of white chocolate.

Let sit for 5 min.

Then use the mixer and mix for about 3 minutes. It will be smooth.

Allow to cool for a few minutes (if it is not already) and add the raspberry juice.

Mix well.

Refrigerate until cold, at least 4 hours or overnight.
