When life give you lemons you make lemonade or in my case I make…

Lemon Bars.

Lemon bars are quite simple to make. The first part is a perfectly crumbly shortbread base followed by a gooey lemon topping.

The final special touch – magic sugar dust  …and the princess came to our blog.

Her name is Martina McBride and she is a very famous country singer. She is also very famous for her cooking and baking.

Her book “Around the Table” is must have. For today and for this blog I am going to make “Lemon Coconut Bars”.

So, if you need some magic in your life…try this recipe.

PRINTING THE RECIPE

Prep Time: 20 minutes
Cook Time: 35 minutes
Total Time: 55 minutes

Ingredients

  • Crust:
  • 2 cups AP flour
  • 1/2 cup sugar
  • 1 1/2 cups sweetened flaked coconut
  • 1 1/2 sticks butter, chilled and cubed
  • Filling:
  • 1 1/2 cups sugar
  • 4 large eggs
  • 1/2 cup fresh lemon juice
  • 2 tsp AP flour
  • 1 tsp baking powder
  • 1/3 cup icing sugar

Instructions

  1. Heat oven to 350 F.
  2. Line 13x9 baking pan with aluminum.
  3. Combine flour, sugar and 1/2 tsp salt in processor. Add coconut and butter.
  4. Process until a fine meal forms, press into pan.
  5. Bake for 15 min.
  6. For the filling:
  7. Combine first 6 ingredients and a pinch of salt in processor,blend until smooth.
  8. Pour over hot crust.
  9. Bake for 20 min.
  10. Let it cool. Dust with magic and say

Coffee Crepe Cups – Part 2

Hello,

Let’s start making Coffee Crepe Cups. Before I start making them let’s talk about crepes. The word crepe is French for pancake and is derived from the Latin crispus meaning “curled”.

Crepes originated around the 12 century in Brittany, a region in the northwest of France. Crêpes are also common in other European nations, such as Italy, Poland, Romania, and Denmark, although they are known under different names.

In areas of Eastern Europe, the meal is called palacinka (Serbian,Czech, Slovenian). In Danish, it is Pandekage and in Dutch it is pannekoeken. There are two types of crepes:

  • Sweet
  • Savory

Now that we have a basic knowledge of crepes we can start making them.

This is my favorite recipe and it is the best one you can find on the Internet. I made million version of this recipe but today it is my coffee version.

For this recipe we need the following ingredients: eggs, milk, coffee, flour, salt, oil, water.

Ingredients

  • 1 cup AP flour
  • 2 eggs
  • 3/4 cup coffee
  • 3/4 cup milk
  • 1/4 cup H20 (water)
  • 1/8 tbs salt
  • 1 tbsp oil

Instructions

  1. In a large mixing bowl, whisk the flour and the eggs.
  2. Add milk, coffee, water, salt and oil.
  3. Beat until smooth.
  4. Let batter sit at least 15 min at room temperature or if you are not in a hurry you can refrigerate in an airtight container up to 1 day, whisk before using.
  5. Heat a 12-inch nonstick skillet over medium. Lightly coat with oil. Add 1/2 cup batter and swirl to completely cover bottom of skillet. Cook until underside of crepe is golden brown.
  6. Loosen edge of crepe with a rubber spatula or knife, and quickly flip. Cook 1 minute more.
  7. Turn crepe out onto plate.
  8. Repeat with remaining batter, brushing skillet with oil and stacking crepes on plate.

Now, my friend you are ready for “Fancy Coffee Crepe Cup”.

Now, it is easy part. Let’s have fun. Start with the whipping cream. ( O, I know…..things we can do with whip cream…).

After the whip cream, add some Nutella and honey.

… add your favorite fruits…banana, grapes, kiwi and so on…

Add more whip cream…(and why wouldn’t you?)

The amount of water you need to drink will depend on your current weight.
Obviously a woman of 125 pounds does not need to drink as much as a woman who is 200 pounds.
Here’s how much water your body requires to lose weight based on your weight.
132 lbs or 60 kg you need to drink 2L of water (8 cups)
143 lbs or 65 kg you need to drink 2.1L of water
154 lbs or 70 kg you need to drink 2.3L of water
165 lbs or 75 kg you need to drink 2.5L of water
176 lbs or 80 kg you need to drink 2.6L of water
187 lbs or 85 kg you need to drink 2.8L of water
198 lbs or 90 kg you need to drink 3L (12 cups)
209 lbs or 95 kg you need to drink 3.2l
220 lbs or 100 kg you need to drink 3.3l

….and so on…
